Why do you think we (as a society) create categories? What purposes do they serve?

I believe we create categories, stereotypes, and other mental heuristics because the human mind is incapable of keeping track of all the nuances of variety in the world. Think about cars for example. It is much easier to think about broad categories of sports cars, station wagons, and SUVs, than to try and remember all the various details of each individual vehicle.
And that's just one random example, but I think it applies to a great many things (even, for example, the question categories on this web site). Human beings (and therefore society) simply do not have the mental capacity to keep track of all of the uniqueness of things. It's easier and faster to categorize everything into similar groups (regardless if those similarities really exist).
