Freshly made butter is one of the tastiest foods on Earth. Of course, as with most tasty foods, butter is one of the unhealthiest, so it must be eaten in moderation. If you’ve never eaten fresh-churned butter, now is the time to try it. It is very easy to make at home. If you have an electric mixer it is even easier. All you really need, though, is a jar and lid.
Butter is essentially just milk fat. The process of making butter involves only the separation of the milk fat from the liquid. The raw ingredient to make butter is heavy whipping cream. You can buy this in the dairy case of most any grocery store. I like to use an electric mixer to make butter. Pour 1 – 2 cups of heavy cream in a bowl. Insert the mixing rods into the cream and turn on the mixer. The cream will begin to thicken into whipped cream. You can stop here if you like whipped cream, but if you continue mixing the cream, you will notice it begin to form clumps and a liquid will separate from the clumps. When it no longer clumps, you have your butter. The liquid is buttermilk. Pour it out. Pat the butter with a paper towel or strain it through cheesecloth. Add a little salt, if you like, and enjoy.
If you don’t have a mixer, fill a jar about 1/3 full with heavy whipping cream. Shake the jar strongly. Continue shaking. It helps to have a partner because you will need to shake the jar for about 30 minutes. When finished, pour off the buttermilk and pat dry the butter.
