How to make buttermilk


Is it true I can make buttermilk at home? If so, how do I make it?

Sort of. You probably can't make real buttermilk, but you can make something that acts like buttermilk.

Back in the old days, when you wanted to make butter, you'd let whole milk sit out until the cream and milk separated. While this happened, bacteria would naturally grow in the milk, creating lactic acid. So, if you have access to unpasteurized milk, you could make buttermilk this way. Modern buttermilk is pasteurized skim milk that has had this natural bacteria added to it to create the acid.

While buttermilk is used in baking for its tang, it also works as a chemical agent in soda breads. You can make a substitute for baking by mixing a tablespoon of white vinegar or lemon juice to a cup of milk.
