Homemade frosting is much tastier than that store-bought frosting in the plastic cans. And really, if you are going to go through the trouble of making a cake or brownies at home, it doesnt take much more effort to go that extra mile in the name of flavor. This recipe is for chocolate frosting, but you can make it vanilla by simply substituting the cocoa with extra powdered sugar. This recipe is also great because it requires no cooking except to melt a stick of butter.
Ingredients
1/2 cup (1 stick) melted, unsalted butter
2/3 cup unsweetened cocoa powder
1 tsp vanilla
3 cups powdered sugar
1/3 cup milk
Begin by adding the cocoa and vanilla to the melted butter. Although the butter must be melted it should not be hot. Allow it time to cool without hardening. Mix this for about 30 seconds with an electric mixer. The butter/cocoa mixture should be smooth and creamy. Add the powdered sugar and then the milk. Mix again with the electric mixer for 2 3 minutes until the ingredients are all blended smoothly together. It should be used to frost your cake or brownies immediately. Any extra can be refrigerated for several days until needed, but it will lose some of its creamy consistency the longer it stays unused. If the frosting seems too runny, you can add a little more powdered sugar to thicken it. It should stick to the top of the cake without running off.
