Making cheese is a great thing to help improve your lifestyle and your consumption! It's fun, and pretty easy, depending on what kind of cheese you want to make. You'll need a few things before you begin, though.
First, you want to use raw milk. This will probably be the hardest thing to find, but it's almost impossible to make high quality milk from store-bought, pasteurized milk. It's impossible to find raw milk in stores in most states, so look at www.realmilk.com for a supplier in your area. The only other special equipment you need for the simplest cheese is cheese cloth! It's available in many grocery stores.
The basic ingredients are milk, buttermilk, lemon juice and salt. You can also add herbs and other flavorings to your liking.
Heat the milk in a saucepan until it's steaming. Add the buttermilk and the lemon juice and turn off the heat. Stir the milk as it forms little lumps: these are called curds, and the watery liquid that separates out is the whey. Let it sit for 10 minutes.
Place several layers of cheese cloth in a colander, and ladle the curds and whey into it. Allow it to drain here for 15 minutes.
Wrap the cheese in the cloth, and let it drain another 30 minutes, suspended from a wooden spoon over a pot. Remove from the cloth, then add the salt and herbs. Let it chill overnight, and eat in any way you would eat ricotta or cream cheese!
